The 9th Avenue location became Uncle Ray’s Chicken Rice, a tribute to Chef Raymond Kiang’s late father, Sergeant Kiang, who transformed Singapore’s iconic street dish into a poached, boneless legend. Tradisyon remains open in other locations.
